Cloning Lost Coast Tangerine Wheat - Continued
Well we tried a taste test of the experiment to clone Lost Coast Tangerine wheat beer. Each of the 5 categories; 1 - no added tangerine oil, 2 - 1/2 tsp per gal, 3 - 1tsp per gal, 4 - 1 1/2tsp per gal, and 5 - 2tsp per gal were tasted. Here are my taste bud results:
1 - This is a very nice tasting beer. Light and refreshing with a clean finish. No bitterness at the end and easy on the taste buds. I like this one and will make it again.
2 - Like Cat-1 this is very nice but there is a slight tinge of tangerine aroma when you first bring the beer to your nose. Very light tough and you can also taste a little of the tangerine extract in the beer. However, like all the other categories that had the extract added, it kinda tastes like the extract was added...duh. It does not taste like it is blended into the full aroma of the beer, which is what I feel is a must.
3 - Like Cat-1 and Cat-2 but there is a more distinct aroma of tangerine with this one but still a little lighter than I would want. The beer tastes really good though with a nice effervescence and not foamy at all. The tangerine taste still tastes like it was added :(
4 & 5 - The good news is that the tangerine aroma is very nice and in category 5 almost smells exactly like the commercial tangerine wheat. However there is one major problem. It appears that the increase amount of tangerine extract stymied the creation of effervescence in the bottle and the beer is flat after 3 weeks. This tells me that at the higher quantities of added oil the tangerine extract will have to be introduced into the last 10 min of the boil to break down the oil and blend the aroma into the wart.
Anyway...the first 3 categories will be a wonderful refreshing beer that we will enjoy.
I will get another experiment going in a few weeks using the same ingredients but separate the wart into 2 batches; 1 - 2tsp per gal and 2 - 3tsp per gal. The tangerine extract will be introduced at the last 10 min of the boil on each batch. I believe this next experimental batch will be really good.

Cloning Lost Coast Tangerine Wheat - continued
On my last post I mentioned that I was attempting to clone Lost Coast's Tangerine Wheat Beer. Well...on August 7th, the experiment was bottled. As I had mentioned before I was going to add different quantities of Tangerine Oil Extract to different bottles to see if I can come up with a close match for one of my favorite beers. Here are the particulars of the bottling process...
Ending SG (specific gravity) was measured at 1.009 so I made a 1/4 cup sugar solution(1 cup water, 1/4 cup sugar, 2oz citric acid and heated to 190F for 5 min) and racked the beer from it's secondary into a bottling carboy containing the sugar solution. I separated the beer into 5x1-gal batches to contain different levels of tangerine oil extract addition. The first gallon I did not add any tangerine extract. I wanted to see how the beer would taste with the original additions of tangerine rind and juice. The beer smells and tastes good but a few weeks in the bottle will make a difference.
The second gallon I added 1tsp of the extract and it smelled really nice but my first thoughts was it was to much extract. It was quite a bit more pungent than the commercial product. I went ahead and left it that way and produced 9 bottles. Each bottle was labeled to indicate the 1tbs extract per gal. On the third gallon I decided to cut back on the extract and only added 1/2tsp to the gallon. The aroma was not as pungent and seemed quite pleasant. This might be the one...but I kept going.
On the 4th and 5th gallon I increased the amount of extract to 1.5tsp and 2tsp respectively. The plan is to keep the beer at room temperature for 3 weeks before the taste test. On Sept 3 I will open one bottle from each batch and try them out. I am confident that one of these experimental batches will yield a close enough match.

Cloning Lost Coast Tangerine Wheat
Experiment - Lost Coast Tangerine Wheat Clone
Last week I ventured to clone a great beet, Lost Coast Tangerine Wheat from the Lost Coast Brewery in Eureka, Ca. I was turned on to this beer by my son a few months ago and have loved it ever since. I have heard it described as “...taking a bite into a juice ice cold Tangerine on a hot summers day...”. I believe it so I decided to investigate beer blogs to see if anyone had cloned the beer. And I found plenty of ideas.
Some ideas were pretty far fetched to say the least. And many people tried to simply add cut-up tangerines or tangerine rind into the wart, which I personally don’t think that will work. Some even said you needed 8 oz of the rind to make the difference. Do you know how many tangerines you need to shave to get 8 oz or rind? A ton... That made me think that it would be way to costly to make large quantities of tangerine wheat using either the whole tangerine and/or the rind. So I thought there had to be some other method and tangerine oil extract came to mind. It is relatively inexpensive and goes a lot further than the raw fruit. So here we go...
Gathering bits and pieces of many different recipes, I ended up with the following partial extract list:
7lb Wheat Extract
2lb Pale 2-row malt grains
2lb Wheat malt
2oz Hallertau Hops
1 Winfray tablet
1 cup tangerine juice (from the rind shaven ones)
2 oz tangerine rind
Wyeast 3068 Weihenstephan Wheat yeast
This recipe set the SG at 1.056 which should yield approx. 5% ABV.
The trick is knowing how much tangerine extract to add. I decided to add the extract just before bottling instead of into the wart or fermenter. Since I am considering this batch an experimental one, I will separate the batch into 5x1 gal amounts with different amounts of the tangerine extract in each. The batch that comes closest to the aroma and taste of the Lost Coast Tangerine Wheat is the winner.
Bottling will be this weekend and I will add more on this experiment later...

Winter Ale 2009
Hi again,
It’s time to make some beer for Christmas...I will call this my, ah...Winter Ale! I can't believe it is already the holidays. Man time flies when you're having fun. Boil will be slated for Nov 15th with bottling slated for Nov 27th. Three weeks cool bottle lagering will bring this beer into it’s greatness.
This batch will incorporate a new secondary fermentation process after 4 days of primary. I am trying to accomplish a more brilliant beer in clarity and color with a crisp finish. It will also have a higher ABV than the Summer Ale.
Here is the recipe and Step-by-Step process 15 gallans (3 x 5gal batches):
Winter Ale
Secondary Fermentation method
(15 gallons extract with grains)
OG 1.062; FG 1.012;
Ingredients
3 x 7lb Tubs light malt extract syrup
3 x 1 lbs Victory (40L) malt
3 x 1 lbs.Special (50L) Roast malt
3 x 1 lbs.Crystal malt (40L)
3 tsp Burton Water Salts
4.5 oz - 6.2 AAU Cascade hops (bittering hop) 60 min
1.5 oz - 6.2 AAU Cascade hops (bittering hop) 30 min
1.5 oz - 1.2 AAU Fuggle hops (flavor hop) 15 min
2.5 oz - 1.2 AAU Fuggle hops (aroma hop) 2 min
Irish moss (Whirifloc tablets – 1 tablet for 5gal)
3 - White Labs WLP001 (California Ale) or Wyeast 1056 (American Ale) yeast
Optional: 0.5 cup of corn sugar for priming per 5 gal
Step by step
Steep crushed malts in 2-2.5 gallons of water at 154º F for 30 min.
Remove grains from wort, sparge grains with 1 gal 170º water.
Add Water salts and bring to a boil.
Add 1/2 malt extract (3.5 lb) and bring to a boil.
Add Cascade (bittering) hops for 60 min of boil.
Add Irish Moss 15 min into boil.
Add Cascade (bittering) hops at 30 min into boil.
Add 1/2 malt extract, stirring at 50 min into boil to sanitize.
Return to boil, add Fuggle (flavor) hops for last 10 min of boil.
Add Fuggle (aroma) hops for the last 2 min of the boil.
When finished boiling, strain out hops, rapid cool the wart to 100º F and add wort to 6gal sanitized carboys with 2.5 gallons cool water in a fermenter. Top off with cool water to 5.2 gallons. Take temperature reading – should be at 75º F, aerate the wart and allow the wart to cool over the next few hours to 68-70º F, and pitch the yeast. Ferment for 4 days. After 4 days of primary fermentation, rack into 5 gal secondary fermenters and allow beer to finish for 7 days. On 8th day, add 1/2 cup priming sugar to bottling carboys and rack beer into bottling carboys. Bottle beer and lager for three weeks.

Primary Fermentation (blow-by): 3 days @ 68 deg

Bottle Fermentation: 2/3 cup sugar for bottle fermentation
Grain Bill:
7# (1 Bucket) Light Amber Liquid Malt Extract (LME)
2# Roasted and Crushed Light Crystal Malt
Hop Bill:
1 oz. Cascade Hops (bittering)
1 oz. Willamette Hops (flavor)
1 oz. Willamette Hops (aroma)
1 Whrlfloc Tablet (Irish Moss)
Mash Schedule:
Crush grains, place in the muslin grain bag, place the bag into the brew pot to 170F.
Add the LME at beginning of boil.
Add Bittering hops at beginning of re-boil
At 30 min, add flavoring hops
At 45 min, add Whrlfloc Tablet
At 60 min, remove from heat, add aroma hops, cover, set 10 min.
Fast cool down to 100 degrees
Brewers Notes:
Procedure:
Begin by soaking the LME in a bowl or pot of warm water to make it easier to pour.
Fill your brew pot (preferably a 20-32qt. stainless stock pot) with two gallons of cold water.
Place the crushed grains in the muslin grain bag and secure with a knot at the top. Place the bag into the brew pot and begin heating the water. When the water reaches a temperature of 170F remove the bag and discard. Continue heating the water until it reaches a boil. When the water is boiling, remove the pot from the heat and slowly add the LME stirring constantly to avoid scorching. When thoroughly mixed return the brew pot to the heat and return to a boil. BEWARE OF THE BOILOVER! When the mixture first boils it may produce a heavy foam. Watch for the foam to rise, and when it does, turn off the flame until the foam subsides (if using an electric stove, it may be necessary to lift the brew pot off of the burner). After the foam has risen once, it will generally lessen, and it’s safe to return to a steady boil without foaming over. However, sometimes foaming may occur again. If so, simply repeat this procedure until foaming finally stops. After you have achieved a steady boil, add the bittering hops and continue boiling. At the 30 minutes boiling point, add the flavor hops. At the 45 minute boiling point, add the Whirfloc Tablet (Irish Moss). At the 60 minute boiling point, remove the brew pot from the heat, add the aroma hops, and cover for 10 min.
While the wort is cooling, fill your sanitized fermenter with 3 gallons of cold water.
When the wort has cooled to under 100F, add it to the cold water in the fermenter (splashing is ok and even recommended to aerate the wort at this stage). Try to leave as much of the sediment on the bottom of the brew pot as you can (siphon if possible). Take the temperature of the wort in your fermenter. It should be below 75F. Remove a sample to measure the Original Gravity with your hydrometer (do not return the sample to the fermenter when finished). Then add the yeast and seal your fermenter with an airlock (bucket) or blow-off hose (carboy) and place in a spot where the temperature stays between 65F and 70F. Within the next 24 hours fermentation should start.
After 3 days the fermentation should subside. Take another hydrometer reading. At the hydrometer reading of 1.020, it is time to bottle and finish the fermentation in the bottle. Make sure your bottles and caps are sanitized before adding the beer. Let beer set for the next 2 - 3 weeks at room temperature before refrigerating. Beer should be good to go 2 weeks after refrigeration.
